Chef Yannis tells us about his culinary philosophy:
"I take pleasure in researching local dishes so our guests taste a flavour of the authentic culture of the destination through which they're travelling, such as green curry or chicken rendang.
My style is European-Asian blend, using the freshest ingredients from farmers and food markets along our journey between Bangkok and Singapore.
There are obvious challenges of cooking on a train, such as limited space, water availability and electricity management. All the same, with careful and creative planning, we produce memorable and delicate dishes throughout the day."
